TUNA & RICOTTA RILLETTES (by France)
In France, everyone loves rillettes. Rillettes are the next level up of indulgence, above pate and just below foie gras. Rillettes are usually made with porc which is heavily salted and slow-cooked in fat. They are so fatty that they come with a layer of fat that you have to scrape off before you can get to the meat part. Anyhow... everyone loves them but me so I made a healthier version with tuna. Here's a recipe for tuna & ricotta rillettes - spread them on bread or eat them over crunchy veggies. They are light, protein-packed and flavorful, minus that gross layer of fat I was telling you about. Enjoy!
