Pata Negra or Iberian Ham is delicious, it has a smooth texture and savory taste. I love it for its taste but also for the memory it holds. It reminds me of the wedding of my older sister, Aude. In France, weddings last late into the night... Wedding guests and the family often dance until sunrise so it's tradition to serve some food mid way through. At my sister's wedding, Pata Negra was served around 2am. We all made sandwiches and kept going until... sunrise indeed. Here it's presented Chinese style, with chopsticks, but it's usually eaten as an appetizer with baguette and cheese (in a similar fashion to prosciutto). Enjoy!
