When hosting a dinner, we often think to buy bread and cheese, creamy dips or chips to hold people over while we finish cooking. I used to do that at lot but, often found that my guests were no longer hungry come dinner! So I've started to make the nibbles I serve before dinner much lighter. Here's an example: refreshing tomato & celery gazpacho-esque soups to be enjoyed as a shot. A fun ritual to kick off any dinner party!
Serves 6 l Difficulty: easy l Prep time: 15min l Total time: 15min
6 pealed tomatoes (take out seeds)
6 big celery sticks
1/2 bouquet of cilantro
Salt & pepper
6 shot glasses
1. Cut tomatoes in small pieces. Clean cilantro and celery.
2. Blend tomatoes apart from celery and cilantro (keep some strands for decor).
3. In each glass, pour the celery and cilantro blend first then the tomato juice. Decorate with strands of cilantro. Serve with Tabasco on the side.
