Try these ricotta and fig toasts and feel the Summer vibe! The secret to making these is to use quality ingredients. The recipe is so simple that the finished experience depends on what ingredients you make it with... Start with whole milk ricotta and ripe figs and sprinkle them with fresh rosemary, crunchy fleur de sel (crystal salt), nutty walnuts and aromatic extra virgin olive oil and honey. I make these for a quick lunch or dinner... when I'm too lazy to cook anything complicated but still want to enjoy something with complex layered flavors.


Serves 1  l  Difficulty: Very easy  l  Prep time: 10min  l  Total time: 10min


INGREDIENTS
4 large sourdough bread toasts
2 cups of fresh ricotta cheese
1/2 spoon of virgin olive oil
12 sliced fresh figs (black or green)
1/2 spoon of fleur de sel (crystal salt)
Handful of crushed pecan nuts
4 strands of fresh rosemary
Wildflower honey (or any kind you love)

STEPS
1. Spread a thick layer of fresh ricotta on each bread toasts & drizzle with olive oil.

2. Cover each toast with sliced figs
Sprinkle fleur de sel, pecan nuts and rosemary.

3. Drizzle a generous amount of honey over each toast & serve.
