Maman's makes this delicious onion chutney that’s perfect to serve with many meals with our easy and simple recipe. This homemade version tastes a lot better than the store-bought one, and it takes less than an hour to make! Plus the best part is that you can make a big batch and save for a few months. 3 tablespoon olive oil
3lb onions, peeled & thinly sliced
10oz muscovado sugar
7oz red wine vinegar
3 tablespoon balsamic vinegar
3 cloves garlic, crushed
1 tablespoon wholegrain mustard
1/2 teaspoon salt
Duck magret slices, smoked
1. Heat the oil in a large saucepan and gently fry the onions over low heat for 25-30 minutes until softened but not browned.
2. Stir in 3 tbsp sugar, increase the heat and cook for 3-4 minutes, until the onions are browned, then add the remaining sugar and all the other ingredients (but the duck magret slices).
3. Simmer gently for 45 minutes to an 1 hour until the liquid has reduced and the mixture has thickened and become a dark caramel color.
4. Spoon the chutney into appetizer spoons or small dishes and top off with a piece of duck magret. Enjoy!
Cook's note: this chutney can be stored for 6-12 months into cooled, sterilised jars, then seal and label.
