STRAWBERRY CHIA PUDDING (by France)
This breakfast power house is made with my friend Alex's chia seeds, he grows them in Paraguay & brought me back a huge bag last year. Since then, I make a lot of my breakfast or dessert recipes with chia seeds. It happens that they are among the healthiest foods on the planet. Loaded with with nutrients like antioxydants, fiber and Omega-3, they can have important benefits for your body and brain. Bon appetit
Serves 2 l Difficulty: easy l Prep time: 20min l Total time: 20min
For chia pudding:
4 tablespoon chia seeds
1 cup almond milk
1 teaspoon vanilla extract
2 tablespoon pure honey or agave (optional)
For strawberry smoothie:
1 cup fresh strawberries
1 ripe banana
1 tablespoon almond butter
¼ cup almond milk
3 mint leaves
1. Add the milk, chia seeds and honey. Stir ingredients to incorporate. Cover container, and refrigerate overnight (if you don’t have time, you can also let the chia seeds absorb the liquid in 15 minutes).
2. Add all the smoothie layer ingredients into a blender (or nutribullet) and process to obtain a creamy mixture.
3. To assemble the glass start with a layer of chia puding, top with strawberry smoothie and garnish with fresh fruits and mint leaves. If you want to pretty-it-up, slice a strawberry into a few pieces and slide each slice against the filled glass to the middle of the chia pudding portion.
4. Proceed the same with the second glass, then serve or pack to go.
