PINEAPPLE BEIGNETS (by Maman)

Maman's childhood, which was partially spent on the Reunion Island, taught her loads of tropical fruit recipes. This is one of them, typical of what she used to nibble on when coming home from school... Bon appetit!


Yields 2 dozens  l  Difficulty: easy  l  Prep time: 45min  l  Total time: 45min


INGREDIENTS 

1 small fresh pineapple

2 cups flour

1 cup beer

Vegetable oil

4 tablespoons sugar

STEPS
1. Heat about 2 inches vegetable oil in a large skillet over medium-high heat.

2. In a small bowl, mix flour, beer, sugar until blended into a thick yet runny dough.

3. Take one pineapple slice (either whole or cut in half) with a spoon and dip it into the dough, then dunk it in the heated oil. Let it fry until golden on each side (takes about 5 min or less).

4. Rest fried pineapple slice on paper towel to absorb excess oil.

5. Repeat with each slice.
