MINT PESTO ON STRAWBERRY CARPACCIO (by Maman)

This is Maman's artful yet super healthy dessert concoction. We all love it, it's fresh and summery... Plain yum. Bon appetit!


Serves 4  l  Difficulty: easy  l  Prep time: 15minl  Total time: 20min


INGREDIENTS 

12 fresh strawberries (500g)

1 mint bouquet 

5 tablespoons sugar 

1 lemon, juiced 

1/3 cup pine nuts (50g)

A few drops of balsamic cream (different from the vinegar)

STEPS 

1. Wash strawberries. Cut the stems off and slice each down the height of the fruit.

2. In a blender, mix mint leaves, lemon juice, pine nuts and sugar. 

3. Lay out the sliced strawberries on 4 individual plates, and drop a spoon full of mint pesto down the middle of each plate. You can decorate each plate as you wish but here, we've also added small drops of mint pesto around the plate and a few drops of balsamic cream on the strawberries.
