GOAT CHEESE & FRESH MINT QUICHE (by Maman)

Given the South of France origins of our family, goat cheese has always been a staple of our family diet. We love to cook with it across recipes... whether we're making an appetizer or an entree like today's recipe which marries goat cheese with plain yogurt and mint to make a soft and fresh dish. Enjoy it with a green salad and diner is ready. Bon appetit!


Serves 6  l  Difficulty: easy  l  Prep time: 15min  l  Total time: 40min


INGREDIENTS

1 puff-pastry sheet (You can use Dufour's Classic Puff Pastry at WholeFoods) (250g)

2 small goat cheese, dry 

3 eggs 

1.5 cup plain yogurt (450g)

Pinch of salt, pepper and nutmeg

1 bouquet fresh mint, finely chopped

STEPS

1. Pre-heat your oven at 450F (250C). Spread the puff-pastry sheet onto a parchment-lined quiche dish (a pie dish works great too!).

2. Poke it lightly with a fork and pre-bake it in the oven for 10min

3. In a mixing bowl, mix the eggs with the yogurt. Add in the mint. 

4. Cut the goat cheese in small pieces and spread them across the puff-pastry. Now pour the mix in the bowl over the goat cheese and bake for 25 minutes.
