SOBA SALMON SOUP (by Maman)
Maman's love for Japan expands beyond home decor, floral arrangement (what they call Ikebana) and fashion... well into food. She loves all food that is Japanese for their flavors, textures and understated simplicity. This soba noodle soup is one example... it's quick to make and so aromatic and flavorful that it will most likely become a weeknight dinner staple for most. Bon appetit!

6.5oz soba noodles (180g)
3.5oz miso paste (100g)
3 cups boiling water (75cl)
1 salmon filet, sliced thinly sashimi-style
6 shiitake mushrooms, sliced thinly
1 nori seaweed sheet, sliced in thin strips
2 cilantro strands
1. Boil soba as indicated on the pack.
2. Prepare the miso broth by mixing the miso paste in the boiling water.
3. Divide the noodles, salmon and mushrooms and seaweed across the 2 soup bowls. Pour over the broth.
4. Top with cilantro leaves and serve warm.
