ZUCCHINI FLAN & RED PEPPER COULIS (by Maman)

Zucchini flan is one of Maman's staple. It's a delicious source of nutrition. You can also think of it as a crust-less quiche... Make it as an entree for lunch or a starter for a dinner... and serve it with a red pepper coulis to start the meal with a dish strong in color contrasts! Enjoy!


Serves 6  l  Difficulty: easy  l  Pre time: 20min  l  Total time: 50min


INGREDIENTS
7 zucchini, trimmed and shredded

1 tablespoon olive oil

8 eggs, beaten

1/2 cup creme fraiche

3/4 teaspoon table salt

1/2 teaspoon black pepper, freshly ground

1/2 teaspoon fresh oregano, minced or                             1/4 tsp dried

1/3 cup fresh parsley, minced

1/3 cup fresh basil 

 

For red pepper coulis: 

4 red peppers, washed and sliced

1/2 cup water 

1/2 cup white wine 

1/2 cup creme fraiche 

Healthy pinch of salt & pepper 

STEPS

1. In a pan with olive oil, cook zucchini with sliced red onion until soft, about 20 minutes,  allow to cool. If there is water remaining, drain the zucchini in a colander.

2. Preheat oven to 375F. 

3. In a large mixing bowl, combine cooked zucchini, eggs, creme fraiche, salt, pepper, oregano and parsley.

4. Pour into prepared silicone baking dish. Bake until center sets, about 30 minutes. Allow to cool for at least 30 minutes before cutting into pieces.

Make coulis: 

1. Mix all ingredients (but creme fraiche) in sauce pan for about 20 minutes until peppers are tender. 

2. Blend all ingredients (included creme fraiche) into a runny smooth coulis. Store in fridge until ready to serve.
