I made this for a friend of mine who is opening a restaurant in Japan. He needed pictures of what his menu could look like and he asked me to come up with starter ideas. I made this scallop and uni dish... it's a delicious, and beautiful, way to start a meal. Bon appetit!
Serves 1 l Difficulty: very easy l Prep time: 20min l Total time: 20min
5 fresh scallops (buy sashimi grade)
5 pieces of sea urchin (buy sashimi grade)
Fish caviar (any type)
2 tablespoons avocado oil
1. Fill the bottom of a plate with a thin layer of avocado oil (or olive/walnut oil).
2. If scallops are too thick, then slice them in half and place them on the plate.
3. Top each scallop with a piece of sea urchin, 1/2 teaspoon of caviar and a few strands of sprouts.
4. Salt and pepper across the whole plate.
