EXPRESS DETOX SALAD (by Maman)
On lazy days, after a long day on one of her construction sites, Maman throws together express salads from what she finds in the fridge and the pantry. This one is made with endives, zucchinis, cherry tomatoes, walnuts, cranberries, pistachios and apples served with walnut oil dressing. It's delicious. Bon appetit!
Serves 2l Difficulty: very easy l Pre time: 20min l Total time: 20min
1 green apple
1 cup cherry tomatoes
1 large zucchini
1 handful walnuts
1/2 cup compte cheese (substitute for gruyere or manchego)
4 tablespoons olive oil (or walnut oil)
2 tablespoons red wine vinegar
Salt and pepper
1. Cut the endive and peeled apple into small dices. Cut the tomatoes into quarters.
2. Using a vegetable peeler, peel zucchini lengthwise to create long, thick strips. Lay flat on a paper towel until ready to use.
3. Finish by dividing all ingredients evenly across the two bowls. Same for the dressing.
