On hot Summer days, eat this 'Spa salad'. It's fresh, Summery and deliciously savory. Bon appetit!
Serves 1 l Difficulty: easy l Prep time: 20min l Total time: 20min
2 cups cucumber noodles (1.5/2 cucumbers)
1.5/2 cups mixed melon balls (cantalope, honeydew, etc.)
1/4 cup freshly squeezed Lime Juice
2 tablespoon olive Oil
1 teaspoon fresh Mint, diced
1. On serving plates assemble a bed of cucumber noodles, 1 cup per plate. Add melon balls equally to each plates. (I made the noodles using this easy OXO tool).
2. Combine ingredients for the dressing in a small bowl; whisk to fully combine.
3. Lightly dress each salad.
4. Serve with torn mint leaves on top.
