SUMMER HERB & RADISH SALAD (by France)
Cooking for me is a chance to play with colors in addition to playing with flavors. This super easy Summer herb & radish salad is as delicious as it is bright and colorful. Sprinkled with some juicy pomegranate and pumpkin seeds - it's a refreshing way to start a meal. Bon appetit!
Serves 2 l Difficulty: very easy l Prep time: 15 min l Total time: 15 min
1 basil bunch
1 parsley bunch
2 mint strands
3 oregano strands
2 tablespoons pomegranate
2 tablespoons avocado/olive oil
1 tablespoons pumpkin seeds
Salt & pepper
1. Using a mandoline (I used this one), slice the radishes into thin slices. Watch your fingers while doing it!
2. Using a washed pair of scissors, cut basil leaves into thin strips and pull out parsley leaves from their strands - pile the herbs into the center of each plate as your 'salad' base.
3. Sprinkle herb salad with sliced radishes, pumpkin seeds, pomegranate and the mint.
4 .Season your salad with avocado oil, salt and pepper.
