TABBOULEH (by Maman)

Maman looooves fresh herbs, sometimes a little too much (according to my little sister, Lore) but I love them too. Here’s a fresh and flavorful tabbouleh recipe that’s easy to make on any Summer night. Bon appetit!


Serves 8  l  Difficulty: easy  l  Prep time: 20min  l  Total time: 25min


INGREDIENTS

1/2 cup semolina or couscous (100g)

1 lemon juice & its zest 

1 red onion

1 parsley bunch

1 cilantro bunch

1 mint bunch

1 basil bunch

10 cherry tomatoes

1/2 cup olive oil (10cl) 

Salt & pepper

STEPS

1. Cook the semolina as you usually do it. We boil 1 cup of water which we pour onto the dry semolina. We cover the semolina with a plate so it can absorb all the water. Every so often, lift the plate to mix the semolina with a fork so that the grains don't clump together.

2. Add the lemon juice and zest. Then add chopped herbs, red onion and cherry tomatoes.

3. Add salt and pepper and olive oil. 

4. Mix well with a fork and store in the fridge before serving. Serve fresh.
