GRAPE, CABBAGE, CHICKEN, AVOCADO, RADISH SALAD (by France)
Continuing with my obsession with colorful, delicious yet healthful dishes, here is a salad that is super easy to make on weeknights or weekends with your friends. Bon appetit!
Serves 2 l Difficulty: very easy l Prep time: 15min l Total time: 20min
1 head cabbage, leaves separated
1 large avocado, sliced
2 cups shredded chicken breast (I used a rosemary rotisserie chicken)
1 cup grapes, halved
6 radishes, sliced
1/4 cup toasted hazelnuts or pistacchio, roughly chopped
2 tablespoons balsamic vinegar
3 tablespoons olive oil
1 teaspoon honey
1. Cut the cabbage in quarters, separate leaves and steam until al dente. Set aside and let cool.
2. Arrange the cabbage on a serving platter and add the avocado, chicken, grapes and hazelnuts.
3. In a small bowl, whisk together the Balsamic Honey Vinaigrette ingredients and season to taste with salt and pepper.
4. Drizzle the salad with the vinaigrette and serve immediately.
