WHITE ASPARAGUS w/ PROSCIUTTO (by Maman)

In France, we live so close to Spain that asparagus are often white here. Maman likes to cook them with a simple prosciutto and leek sauce. It's simple yet extremely flavorful. A nice twist on traditional green asparagus side dishes. Bon appetit!


Serves 4  l  Difficulty: easy  l  Prep time: 10min  l  Total time: 20min


INGREDIENTS
2 lb asparagus (white or green) 
3 teaspoon balsamic vinegar
1/2 cup olive oil
1 garlic clove, crushed
1 lemon
7 oz fresh leeks (1 cup when chopped) 
1 teaspoon ground ginger
1/2 stick butter
5/6 prosciutto slices

For dressing
2 tablespoons lemon juice
1 tablespoon raw honey
3 teaspoon balsamic vinegar
1/2 cup olive oil
1 garlic glove, crushed (optional)

STEPS
1. Boil or steam asparagus.

2. Zest lemon and set aside the juice for the dressing.

3. Wash and slice leeks in small slices.

4. Cut prosciutto into thin bacon-like strips.

5. Melt butter in a pan and cook all ingredients together for 10 minutes, while stirring frequently. Stop when leeks are tender.

6. Lay asparagus on a large plate and pour prosciutto/leek mix on top.

7. Mix all dressing ingredients and pour over dish before serving. Serve asparagus lukewarm or cold.
